Raw Material Selection

Minh Duc salted egg raw materials are collected directly from our own integrated poultry farms, located just 2km from the processing facility. These farms implement modern care and management protocols. To ensure minimal breakage and prevent contamination during transit, eggs are transported to the factory via specialized trucks. We strictly use fresh eggs (no more than 1-2 days after laying) that are clean and intact. This critical first step lays the foundation for consistent quality throughout the entire production process.

Automated AI-Powered Grading

Eggs are processed through an advanced grading system utilizing AI technology to detect and eliminate any hairline cracks, structural defects, or inconsistent sizes. Only raw materials that meet our strict uniform weight standards are approved. This precise grading process ensures consistency across every production batch, meeting the high-quality requirements necessary to proceed to the next stage: Curing.

Traditional Ash-Salt Curing

The selected eggs are meticulously cured in a traditional mixture of ash and salt. This critical stage is essential for shaping the yolk’s structure and developing its signature characteristics. It is this authentic curing process that imparts the distinct, savory flavor and rich, oily texture unique to Minh Duc’s Ash-Salted Duck Eggs.

Curing & Aging in Storage

The eggs are aged at ambient temperature for a period of 28 to 35 days. This precise timeframe allows the salt to penetrate evenly through the shell, resulting in a mild, balanced saltiness and the signature buttery texture of the yolk. Following this stage, the salted eggs are fully matured and ready for the next processing phase.

The Initial Wash

Upon completing the curing stage, the eggs are processed through an automated washing system to completely remove the outer ash coating. Utilizing high-pressure spray nozzles, this system ensures the shells are thoroughly cleaned before the yolk separation phase. Proper washing is essential to maintain absolute hygiene and preserve the structural integrity of the shells for the subsequent cracking process.

Shell Cracking & Yolk Separation

Once thoroughly cleaned, the eggs are fed into a modern automated cracking machine. This advanced system precisely breaks the shells, separating the whites while carefully preserving the premium yolks. Only yolks that meet our strict quality standards are selected and prepared for the final purification stage.

Final Brine Purification

The separated yolks undergo a final purification process in a specialized brine solution, mixed at a precise, pre-defined ratio. This step ensures any remaining impurities are removed while enhancing the yolk’s natural color and firmness. Only yolks that meet our rigorous quality criteria are carefully arranged onto stainless steel trays, ready for the drying stage.

Drying & UV Sterilization

The salted egg yolks are dried at a controlled temperature of 75°C in specialized ovens equipped with integrated UV germicidal lamps. This dual-action process effectively dries the surface of the yolks, inhibits microbial growth, and significantly extends their shelf life. The drying parameters are precisely adjusted to maintain a tender, creamy core while preventing hardening or discoloration. The resulting yolks exhibit a beautiful vibrant orange hue, a uniform dry surface, and the highest standards of food safety.

Final Weight Grading & Quality Control

Immediately after drying, the yolks are processed through an automated grading system, specifically calibrated to group them into the high-demand 10g-15g weight categories. To ensure absolute perfection, our quality control specialists perform a final manual inspection. This dual-check system eliminates any yolks that do not meet our premium standards or contain residual impurities, ensuring only the finest products proceed to packaging.

Vacuum Packaging & Professional Delivery

Certified egg yolks are placed into high-quality PE bags and vacuum-sealed for optimal preservation. Each bag is carefully weighed and verified to match the specific quantity, weight, and size requirements requested by the customer. All shipping cartons are clearly labeled and securely sealed before being loaded onto specialized delivery trucks.
